I’m Susan Allen welcome to Open Range. In my office I have a snapshot of my grandfather standing proudly  behind the counter of his Portland  meat market many years prior to big supermarkets. Behind him hand made signs on butcher paper advertised a cut and wrapped lamb for $16.00. The man worked six days a week adored his customers and regarded  meat cutting as  an  art. Why am I telling you this? Back after the break.  In today’s Costco era there are still people like my grandpa who put their heart into the meat cutting industry and care about educating consumers. Eric Turner retired  after 20 years in the meat business but missed interactions with customers at the meat counter so he’s developed a forum called meatshop101 where folks  can  find information about meat before they head to the supermarket. So when  I clicked on the  Beef Tenderloin cut  my new personal  butcher informed me that it is  “the shining star of beef steaks, the cotton candy of beef cuts, the almost fork-tender delicacy that has no substitute among meats! But warned me that from time to time, I  will see blowout special prices advertised for maybe $4.99 per lb. or even less, if you’re buying the whole uncut piece.  For a couple of primary reasons, it is wise to be wary of such deals.”  Why? visit www. meatshop101.
