Colorado's Department of Agriculture is highlighting locally grown chile peppers in this month's edition of the Colorado Proud campaign.

Agriculture Department Marketing specialist Wendy White tells Colorado Ag Today that a fired up version of a longtime favorite comfort food, is the perfect way to enjoy the spicy peppers....

"Especially coming from the Pueblo area. Pueblo chiles are really well know not only across the state but across the country too. Our southeastern Colorado growing conditions are really conducive to growing peppers. Those hot dry summer days, the rich soil, the pure water really provides the perfect environment for growing chile peppers. This month's recipe is a green chile baked mac'n cheese."

The Pueblo Chile and Frijoles Festival is September 22nd and 23rd.

The Colorado State Fair wrapped up with just under 445-thousand visitors about a 7 percent decrease from last year. General Manager Scott Stoller said preliminary figures reflect increases in carnival revenue and lots of positive feedback from those who came out for the agricultural shows and displays. Stoller says staff is already getting to work on the 2019 Colorado State Fair.
